In my opinion standard 4 pot with good pads, discs, fluid and lines are more than adequate ;)

I have 2x RE070 and 2xRE040 down tor tread wear indicators or just above but good for track???? Any good to you???

Stick to 17" for the track, you'll have a much better balanced car. And as above choose a good tyre. I have 18 for the road with Falken...
